Our Story

We opened our doors in January 2024, alongside the new transformation of Bristol’s most iconic venue, Bristol Beacon – bringing a fresh chapter to the city’s vibrant food scene.

You can find us nestled behind the iconic Byzantine arches that once fronted the old box office since 1867. Sharing Bristol Beacon’s commitment to the community, we’re a restaurant in the heart of the city, dedicated to sustainability, supporting local farmers, and ethical sourcing.

We partner with local producers to serve the freshest seasonal ingredients, reducing food miles and championing Bristol’s independent farmers. Our mission: to deliver responsibly sourced, innovative dishes with uniquely British and European flavours, all while prioritising environmental responsibility.

Meet our Culinary Lead, Noah

“Watching my mum — a former professional chef — cook in our family kitchen was where my love for food first began. Since the age of 18, I’ve worked my way up through kitchens, starting from washing dishes and learning every step along the way. During lockdown, that passion truly reignited. Experimenting with dishes at home reminded me just how much connection surrounds food, and now in Bristol, I’m excited to share that joy with others.”

 

Noah Chasteau is the heart and soul of Colonnade’s kitchen. He joined the team when we first opened in 2024 as Chef de Partie, and through tireless hard work, curiosity, and unwavering dedication, he has risen to become our Culinary Lead.

From early mornings prepping the freshest seasonal ingredients to late nights refining each plate, Noah brings creativity and sustainability to everything he does. He designs menus that reflect the changing seasons, honouring small-scale farmers and ethical producers. His leadership inspires the whole team, building culture rooted in passion and care.
